A love for food

Food has always been more than just something to eat. Long before becoming a chef, our founder was selective about food, admiring people who cooked with passion, care, and a true understanding of flavour. Over time, that curiosity grew into a passion that shaped a life.

2009 · Arriving in Europe

The journey in hospitality began in Europe in 2009, from the very beginning, as a dishwasher. No culinary school, but never stopped learning. Every kitchen became a classroom, and every experienced chef a teacher — fascinated not only by recipes but by the science behind food, cooking techniques, ingredients, and the small details that turn a simple meal into a memorable experience.

Always a student

Outside the kitchen, learning continued through books, documentaries, culinary shows, and talented chefs from around the world. Even today, still a student — there is always something new to discover, improve, and create. Guests have always been one of the greatest inspirations: every conversation teaches something new.

A shared dream

While one of us developed a passion in the kitchen, Anita was building her own career in hospitality and guest service. Together, we shared the same dream. After long working days, we spent hours discussing our future restaurant — imagining menus before they existed, searching for inspiration, dreaming of a place that reflected who we are. Long before AAYAM had a location, it already existed in our conversations.

Building AAYAM by hand

When we finally found the space that would become AAYAM, it looked nothing like it does today. We started from scratch — cleaning, repairing, organising, building it ourselves, one step at a time. It was hard work, but those days remain some of our happiest memories.

More than a restaurant

Luxembourg is home to many South Asian restaurants, but we felt that authentic Nepalese cuisine deserved a stronger identity, a place where it could proudly stand on its own. We wanted to introduce our guests to the richness of Nepalese flavours while embracing creativity and influences from across Asia.

AAYAM means dimension

In Nepali, AAYAM means dimension, or perspective. That name became the foundation of everything we believe in. For us, dining is about much more than food — it is about discovering something new. A new flavour. A new culture. A new perspective. A new memory. Every guest who walks through our doors is invited to experience a new AAYAM through food. Not simply a meal, but a journey where tradition meets creativity, cultures connect, and every plate tells a story.
